Apricot Glazed Cornish Game Hen

Name: Apricot Glazed Cornish Game Hen
Description: Rock Cornish game hens are a quick, easy and tasty twist to your standard oven baked hens and they’re fairly straight forward in their preparation and cooking.

Note: This Apricot Glaze recipe can be adapted for roast chicken too! Just adjust the cooking time accordingly and use a cooking thermometer to check for doneness. Roast Chicken is done when the internal temperature reaches 170º F.
Ingredients: INGREDIENTS: (Makes more than enough glaze for 4 hens)

4 - 1-½ lb Cornish game hens sprinkled lightly with fresh ground black pepper and sea salt

(Apricot Glaze)
1/2 – cup Apricot Jam
2 tablespoons soy sauce
2 tablespoons Dijon mustard
2 tablespoons honey
Directions: Start with 4 hens weighing 1 to 1-1/4 pounds each. Thaw and remove giblets. Wash thoroughly and place in a roasting pan. I use a corning ware bowl with cover just large enough to snuggly hold the amount of hens I’m cooking. That way, I don’t have to mess with tying the legs and wings with string. (If you are roasting a chicken’ you’ll most likely have to tie the wings and legs)

Place the hens in a pre-heated 375º oven roast the hens for about 40 minutes, covered.

Then remove the cover and coat hens with your apricot glaze.

Bake for another 20 minutes or until the juices run clear when the thigh is pierced with a knife. If using a cooking thermometer, the meat is done when the thermometer registers 170º F. Total cooking time is about 1 hour

This meal is simple elegant, tasty and fun to prepare while entertaining guests.

Serve hens with fresh asparagus smothered in Hollandaise sauce, sliced French Baguette with real butter and and your favorite white wine.

Dining by candlelight is optional depending on your guests!
