Family Secret-No-More.
Name: Venison Chili
Description: This meal really hits the spot and sets the tone on a weekend camping trip.

And, if you really want to show off, fill your big open mouth thermos, throw it into your Saddle bag, and hit the road.
Ingredients: 1 – ½ lbs. Venison Roast, cut into 1 inch cubes
1 – large onion
1 – green pepper
2 – cans diced or whole tomatoes
2 – cans kidney beans ( or any other bean you may like better )
2 - Tbls. Worcestershire Sauce ( secret ingredient )
1 – tsp. Minced garlic ( or 2 large cloves chopped fresh garlic )
3-4 Tbls. Chili powder ( amount can be adjusted to taste )
1 – tsp. Salt
2 – Tbls. Olive oil
Water
Directions: In olive oil on medium heat brown venison, onion, green pepper, garlic, and salt, approximately 5 minutes.

Add chili powder and Worcestershire and brown an additional 5 minutes allowing the venison to soak in the flavors.

There is very little fat here so keep heat at medium to low to prevent burning. Add entire cans, water and all , of tomatoes and kidney beans.

Stir in 2 cans of water. Simmer on low heat for 3-4 hrs or until the venison is tender.

When not prepared in advance, this recipe can be done on your grill in your backyard or on an open campfire at your campsite. (my favorite).
