Grilled Veggie Sandwich

Grilled Veggie Sandwiches
Un-named restaurant in Michigan.
Name: Grilled Veggie Sandwiches
Description: This is the best damn hot veggie sandwich ever and adapted from one of my favorite restaurants in Traverse City, Michigan.
Ingredients: 1 each green pepper, red pepper, yellow pepper, chopped length wise
1 large onion
1 tsp. Minced garlic or 1 small glove chopped fresh garlic
¼ cup chopped green and or black olives (both if you like)
2 Tbls. Olive oil
Sliced cheese of your choice ( my fav is muenster)
Alfalfa sprouts ( hand full )
Your favorite rolls
Aluminum foil – non-stick foil is a god send here
Directions: If cooking on the open road:

Before you leave home make the veggie “pockets”.

Place the chopped peppers, onions, olives and garlic in a ziploc bag.

Pour in 1-tablespoon olive oil on top of the veggies, shake the bag to coat.

Coat foil with remainder olive oil or spray with your favorite vegetable oil spray.

Put the veggie mix onto the foil and fold into pockets and set aside in fridg.

Rinse and dry the alfalfa sprouts and pack into a Ziploc bag, set aside.

Now pre prepare the rolls:

Place a slice of cheese (or 2) on the roll and wrap in foil.

Time to cook:

Just throw your veggie “pocket” onto the grill, or open campfire, and cook for approximately 10 minutes, or till peppers are desired consistency.

If you would like to heat the roll, unfold the foil, open the roll and place it on the grill till heated and the cheese melts, add your veggie mixture and alfalfa sprouts.
